Basic Stove Top➢ Bring 3 cups of water to a boil
➢ Add 1 cup of Lake of the Woods Wild Rice ➢ Reduce heat and simmer for 25 minutes or until kernels puff open ➢ Drain any excess water Yield: 3-4 cups of cooked wild rice Cream of Wild Rice Soup➢ 3-4 cups cooked Lake of the Woods Wild Rice (1 cup uncooked rice)
➢ 1/4 cup chopped onions ➢ 1/4 cup chopped celery ➢ 1/2 can to 1 can cream of mushroom soup ➢ 1 can drained mushrooms Add all ingredients together for a great side dish Put in crock pot for big events to keep warm! Oriental chicken & Wild Rice Salad➢ 1 cup uncooked rice- cooked and cooled
➢ ¼ cup chopped green onion ➢ ¼ cup chopped celery ➢ 1 cup sliced red grapes ➢ 1/4 cup Walnut Pieces ➢ 2-3 grilled chicken breasts, chopped (Marinade recipe below) ➢ 1/2 cup Kraft Asain Toasted Sesame dressing plus 2-3 Tbsp. Mayo ➢ Salt and Pepper to taste Chicken Marinade (Covers 10 chicken breast halves) ➢ ½ cup reduced sodium soy sauce ➢ ½ cup sherry or red wine ➢ 1/3 cup oil ➢ 3 cloves garlic, Minced ➢2 Tbsp. grated fresh ginger root or 1 Tbsp powdered ginger Marinate for at least 2 hours or overnight, then cook. Mix all ingredients. Adjust dressing amount if necessary. |
Wild Rice in roaster➢ Cook up 5lbs of wild rice
➢ Add 3-4 cans of cream of mushroom soup ➢ 1 whole onion chopped ➢ 6-7 stocks of celery chopped ➢ Mix all together in Roaster ➢ Keep roaster on low Yield: Fills whole roaster: Feeds 100 people pork chop wild rice➢ Cook 1 cup Wild Rice for 15 min. (Don’t need to cook all the way)
➢ Brown the Pork chops in frying pan ➢ Mix together in separate bowl- 1 can drained mushrooms, 1 can cream of mushroom soup/celery, 1 cup water, and partially cooked wild rice. ➢ Put pork chops on bottom of casserole dish and top with the mixture. ➢ Bake in oven at 350 for 30-45 min Wild Rice black bean & feta Salad➢ 1 can (15 oz) Black beans- rinsed and drained
➢ 1 1/2 cup chopped tomatoes ➢ 4 cups cooked wild rice ( 1 cup uncooked) ➢ 1 pkg (4 oz) Crumbled Feta Cheese ➢ 1/2 cup chopped celery ➢ 1/2 cup chopped green onion ➢ 1/2 cup fat free Italian dressing ➢ 2 Tbsp (or more) Chopped Cilantro Mix all ingredients and refrigerate Chicken Wild rice soup➢ 1 Cup uncooked Lake of the Woods Wild Rice
➢ 6 Cups Chicken Broth ➢ 1-2 Cups Cooked chicken breasts cut in 1 inch pieces ➢ 1 Cup sliced carrots ➢ 1 cup chopped celery ➢ 1 small onion chopped ➢ 1 cup mushrooms (optional) ➢ 1 1/2 cups of 1/2 & 1/2 ➢ 3 Tbsp butter ➢ 4 1/2 Tbsp Flour ➢ 1 Tsp Thyme ➢ Salt & Pepper to taste Boil 6 cups of chicken broth and add carrots, celery, onion, thyme, and salt and pepper. Boil for 20 minutes or until veggies are tender. Meanwhile boil 3 cups water and add 1 cup wild rice. ( takes 20-25 minutes when using Lake of the woods Wild Rice) Add wild rice and mushrooms to soup and continue to boil. In seperate pan melt butter and add half and half and flour. Then add to soup and boil for 10 minutes and serve. |
